Cooked long and slow until fork-tender, this classic beef brisket is flavoured with garlic, onion and tangy barbecue sauce.

  • Heat oven to 325°F.
  • Combine first 4 ingredients in roasting pan. Add meat; top with 1/2 cup barbecue sauce. Cover with foil; pierce foil in several places with sharp knife or fork to vent.
  • Bake 3 hours or until meat is done (160°F). Transfer meat to cutting board; cover to keep warm. Let stand 10 min.
  • Meanwhile, pour sauce from pan through strainer into large skillet. Discard strained sauce. Place strained vegetables in small saucepan. Stir in 1/2 cup of the remaining barbecue sauce; cook 3 to 4 min. or until heated through, stirring occasionally.
  • Cut meat across the grain into thin slices; place on platter. Spoon vegetable mixture over meat. Serve with remaining barbecue sauce.

Note

For less heat, remove seeds from jalapeño pepper before slicing.
