  • Heat oil in large saucepan on medium-high heat. Add vegetables; cook and stir 5 to 7 min. or until crisp-tender.
  • Stir in broth and barley; bring to boil. Simmer on medium-low heat 40 min. or until barley is tender and liquid is absorbed, stirring occasionally. Remove from heat.
  • Add cheese and basil; stir until cheese is melted and mixture is well blended.


Substitute 4 tsp. dried basil leaves for the sliced fresh basil.

Storage Know-How

Store uncooked barley in airtight container at room temperature up to 9 months.
