  • Cook chicken in hot oil in large nonstick skillet on medium-high heat 3 min. on each side or until lightly browned on both sides. Add barbecue sauce.
  • Push chicken to one side of skillet. Add potatoes and carrots to other side of skillet; cook 3 min., stirring frequently. Stir in water.
  • Spread chicken out in skillet; spoon potato mixture evenly over chicken. Top with the beans and peppers; cover with lid. Reduce heat to medium-low; simmer 10 to 12 min. or until vegetables are crisp-tender and chicken is no longer pink in centres and juices run clear.

Substitute 1 lb. boneless beef sirloin steak, cut into thin strips, for the chicken.

Substitute 3 cups frozen mixed vegetables for the fresh vegetables, adding them to the skillet for the last 5 min. of the chicken cooking time.

This was easy and delicious. I didn't use the water and used frozen vegetables instead. Could have eaten another piece of chicken but pulled back.

Very good. Easy to make. I substituted green peppers for the green beans and I added some slice muchrooms.
