Make It

  • Mix dressing and peanut butter until well blended. Heat oil in large skillet on high heat. Add meat; cook and stir 3 to 4 min. or until browned and almost cooked through. Remove meat from skillet; set aside. Add carrots and onions to skillet; cook on high heat 3 min. or until crisp-tender, stirring frequently.

  • Add meat, bok choy and peanut butter mixture; cook 4 min. or until meat is cooked through and sauce comes to boil, stirring frequently.

  • Spoon over rice; top with nuts.

    Spice it up by adding 1/2 tsp. crushed red pepper to the peanut butter mixture.

    Substitute 1 cup green beans for the bok choy.
