Beef enchiladas that can be prepped in 25 minutes? Yes, please. Here, flour tortillas are filled with a flavourful combination of ground beef, onions, kidney beans, chili sauce and shredded Tex Mex cheese. A sprinkling of feta cheese takes them over the top.

  • Heat oven to 350ºF.
  • Brown meat with onions in large nonstick skillet; drain. Return meat mixture to skillet.
  • Add beans, chili sauce, cumin and cayenne pepper; mix well. Cook 5 min., stirring occasionally. Remove from heat; stir in shredded cheese.
  • Spray 13x9-inch baking dish with cooking spray. Spoon meat mixture down centres of tortillas; roll up. Place, seam sides down, in prepared baking dish; top with feta.
  • Bake 18 to 20 min. or until heated through.

Special Extra

Set out bowls of chopped lettuce, tomatoes and avocados so everyone can help themselves to their favourite enchilada toppings.
