  • Cut beets into 1/4-inch-thick slices, then cut each slice into thirds. Add to large saucepan of boiling water; cook, partially covered, on medium-high heat 20 min. or just until beets are tender. Remove from pan; drain, reserving 1/4 cup cooking water.
  • Heat dressing in same saucepan on medium heat. Add onions and garlic; cook 10 min. or until very tender, stirring occasionally.
  • Add beets along with the cumin and reserved cooking water; cook and stir 2 min. or until heated through.

This flavourful side dish can be prepared ahead of time. Cool, then refrigerate up to 3 days before reheating to serve.
