Make It

  • Heat oven to 350°F.
  • Mix graham crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese and granulated sugar in large bowl with mixer until blended. Add chocolate and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour over crust.
  • Bake 45 to 50 min. or until centre is almost set. Run knife around rim of pan to loosen cake; cool completely before removing rim. Refrigerate 4 hours.
  • Sprinkle with coloured sugar just before serving.

Fun Idea

To add a shamrock design, sprinkle the green coloured sugar over a clover leaf-shaped stencil placed on top of the chilled cheesecake.

Non-Alcoholic Variation

Add 1/4 cup boiling water to 1 Tbsp. Maxwell House Instant Coffee Original Roast and 1/4 tsp. ground cinnamon; stir until dissolved. Use instead of the liqueur.

Size Wise

Enjoy a serving of this rich and indulgent cheesecake on special occasions.

We were not impressed with this recipe. The taste was very bland ... you couldn't taste the chocolate or the Irish cream. Unfortunately we won't be adding this to our recipe book :/
