There is nothing better to freshen up a barbecue, picnic or Wednesday night dinner table than with a fantastic, fibre-rich salad that's bursting with zesty flavour, and this black bean salad definitely fits that description. The beans, avocado, corn and tomatoes go beautifully with any Latin American or Mexican themed meal, but this salad also pairs very well with any grilled meat or fish.
