  • Heat oven to 425ºF.
  • Rub outside of meat with cut sides of garlic halves; season with pepper.
  • Heat oil in large ovenproof skillet on medium-high heat. Add meat; cook 10 min. or until evenly browned on all sides, turning frequently. Drain drippings from skillet, reserving meat in skillet. Place skillet in oven.
  • Bake 30 to 35 min. or until meat is cooked to medium doneness (160ºF). Meanwhile, mix all remaining ingredients except blue cheese in medium bowl until blended. Stir in blue cheese.
  • Cut meat across the grain into thin slices. Serve with the cream cheese sauce.

Serving Suggestion

Serve with hot baked potatoes and steamed fresh vegetables to round out the meal.


If you don't have an ovenproof skillet, just wrap several layers of foil around handle of your regular skillet before using as directed. Be careful when removing skillet from oven since both the wrapped handle and skillet will be hot.
