Agar-agar is typically sold in the form of sheets, sticks or powder. Since it produces a firmer set with a different texture than gelatin, agar-agar should not be used as a substitute for unflavoured gelatin in recipe use. Made from dried seaweed, agar-agar has a neutral flavour.
