These mini potato stacks taste like scalloped potatoes flavoured with blue cheese. So easy to put together, they make the perfect side dish to serve with roasted chicken, beef or ham.

  • Heat oven to 375°F.
  • Layer potato slices evenly in 12 muffin pan cups sprayed with cooking spray, trimming potato slices to fit, if necessary.
  • Whisk dressing and flour in medium saucepan until blended. Add garlic and thyme; mix well. Gradually whisk in milk, then cream until blended.
  • Bring just to boil on medium heat, stirring constantly. Cook and stir 1 to 2 min. or until thickened. Spoon over potatoes; top with cheese.
  • Bake 25 to 30 min. or until potatoes are tender and tops of stacks are golden brown. Cool 5 min. before removing from pan to serve.


Substitute 1 Tbsp. fresh thyme leaves for the dried thyme.


Use a food processor or mandoline to quickly cut the potatoes into thin slices.
