  • COMBINE dry ingredients in a large bowl. Beat with milk, oil and eggs for 3 minutes. Pour one half of the batter into a greased 9" (23cm) square pan.
  • TOP with one half of the blueberries. Pour remaining batter into pan and top with remaining blueberries.
  • BAKE in preheated oven at 375°F (190°C) for 35-40 minutes, or until an inserted toothpick comes out clean and dry.

    Love this recipe. Very easy and everyone in my family loves it. You can make it in one bowl also to cut down on clean up. It bakes off great every time. I add more blueberries, and I roll the blueberries in flour first and then alternate layers of batter and floured blueberries, so the blueberries don't all sink to the bottom.

    This was a really nice, very easy to make coffee cake. I followed the recipe exactly except used regular graham crumbs, and I halved it so we wouldn't have too much cake in case it wasn't good - I'm regretting that now! It was so good! These would also make good muffins. Next time, I'll try mixing some graham crumbs with sugar and sprinkling it on top before baking for a nice streusel-like topping. I'll make this again and again!
