  • Press cheese into 4 (2-inch) patties; place in shallow parchment-lined pan. Freeze 15 min.
  • Mix next 7 ingredients just until blended; shape into 8 (1/4-inch-thick) patties. Top each of 4 meat patties with 1 cheese patty; cover with second meat patty. Press edges together to seal. Refrigerate 15 min.
  • Heat barbecue to medium heat. Combine all remaining ingredients except buns; spoon onto large sheet of heavy-duty foil sprayed with cooking spray. Fold to make packet.
  • Place foil packet on barbecue grate. Grill 3 min. Place stuffed meat patties on grate next to packet; grill 5 to 6 min. on each side or until done (160°F).
  • Remove packet and burgers from barbecue; cut slits in foil to release steam before carefully opening packet. Fill buns with burgers and grilled onions.


Substitute 1/4 lb./115 g Brie cheese for the crumbled blue cheese.

Finish off your burgers with your favourite toppings, such as lettuce leaves, pickles, sliced tomatoes and/or sliced cucumbers.
