  • Brown meat in large skillet; drain. Add salsa and green peppers; mix well. Bring to boil. Stir in rice; cover. Simmer on low heat 5 min.
  • Spread beans down centres of tortillas; top with meat mixture, cheese, lettuce and tomatoes.
  • Fold in opposite sides of each tortilla, then roll up burrito-style. Serve topped with sour cream.


Heat the refried beans in the microwave while the meat mixture is cooking.

    Delicious! I used ground pork instead of ground beef and i prepared brown rice and threw it in the pan once it was cooked. Since I used regular rice instead I cut the quantity of salsa down to 1 1/2 cups so it wasn't so runny. Worked out great!
