To melt chocolate on top of the stove, cook chopped chocolate in saucepan on low heat until chocolate is completely melted, stirring constantly. Or, place chopped chocolate in top portion of double boiler or in bowl placed over a larger pan of simmering, not rapidly boiling, water. Cook until chocolate is completely melted, stirring occasionally. Note: Be careful not to get any water in the melted chocolate or it will seize up and become grainy.
