  • Place 1 cookie on bottom of each of 18 paper-lined medium muffin cups.
  • Stir coffee granules into hot water in large bowl until dissolved. Add cream, dry pudding mix and cinnamon; beat with wire whisk 2 min. or until well blended. Let stand 5 min. Gently stir in 3-1/2 cups of the topping. Spoon evenly over cookies in muffin cups.
  • Freeze 6 hours or overnight until firm. Remove desserts from paper cups just before serving; place on individual dessert plates. Top evenly with the remaining dessert topping; drizzle with chocolate.

Make Ahead

For longer storage, place dessert cups in an airtight container and freeze up to 1 month.

    Turns out superb . Have made it a couple of times . My cookies didn't fit at the bottom of the cupcake liners , so I just crushed them and added some butter to bind them . Press them in to the liners instead of the full cookie . I also added 2 tbsp of Kalhua instead of the cinnamon which everybody likes !!!
