  • Cover bottom of 9-inch springform pan with parchment. Mix graham crumbs and butter; press onto bottom of prepared pan.
  • Reserve 4 caramels, 1 Tbsp. milk and 1/4 cup nuts for later use. Microwave remaining caramels and milk in microwaveable bowl on HIGH 1-1/2 min., stirring after 45 sec. Stir until caramels are completely melted and mixture is well blended. Stir in remaining nuts; pour over crust.
  • Beat cream cheese, sugar and vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over caramel layer on crust.
  • Bake 45 to 50 min. or until centre is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

Size Wise

Sweets can add enjoyment to a balanced diet, but be sure to choose an appropriate portion.

How to Unwrap Caramels

Having trouble unwrapping caramels? Place them in the freezer for about 20 min. - the plastic wrapping should easily peel off.

Make Ahead

Cooled baked cheesecake can be refrigerated up to 24 hours, or wrapped tightly and frozen up to 2 months before serving. If frozen, thaw overnight in refrigerator before serving.

This was my first ever cheese cake. Made it for a cheesecake competition at work -- IT WON! Delicious!

Was a huge hit at the party that I made it for the first time. I have made this recipe twice since then, and I just get rave reviews every single time.
