  • Heat oven to 400°F.
  • Combine first 4 ingredients; set aside. Mix egg, oil, applesauce, brown sugar and 1/2 tsp. vanilla in large bowl. Add dry ingredients; stir just until moistened. Stir in carrots.
  • Spoon into 12 muffin cups sprayed with cooking spray. Bake 15 min. or until toothpick inserted in centres comes out clean. Cool in pan 5 min. Remove to wire racks; cool completely.
  • Mix cream cheese product, icing sugar and remaining vanilla until well blended; spread onto muffins.

Special Extra

Garnish with ground cinnamon just before serving.

    Muffins were very moist. Missing something. Next time I would increase cinnamon to 2 tsp. and a pinch of cloves or nutmeg and add 1/3 cup of raisins. They don't need the icing, which was a nice touch, but very runny. Possibly because the cream cheese was the light brand.
