  • Heat oven to 350ºF.
  • Combine flour, baking powder, baking soda and spices. Beat eggs, granulated sugar and oil in large bowl with mixer until blended. Add flour mixture alternately with egg mixture, mixing well after each addition. Stir in carrots.
  • Pour into greased and floured 10-inch springform pan.
  • Bake 1 hour to 1 hour 5 min. or until toothpick inserted in centre comes out clean. Cool 10 min. Run knife around edge of cake to loosen cake from pan; remove rim. Transfer cake to wire rack; cool completely.
  • Cut cake horizontally into 2 layers. Beat cream cheese and icing sugar in large bowl with mixer until blended. Gently stir in Cool Whip.
  • Stack cake layers on plate, filling and frosting cake with cream cheese icing.
  • Sprinkle with orange zest.

Variaton

Omit orange zest, cream cheese, icing sugar and Cool Whip. Do not cut cooled cake in half as directed. Sprinkle top of cooled cake with additional 2 Tbsp. icing sugar just before serving.
