  • Heat oven to 350ºF.
  • Combine flour, sugar, baking powder and salt in large bowl. Stir in carrots and 1/3 cup flaked coconut.
  • Whisk eggs, milk, oil and extract in separate bowl until blended. Add to flour mixture; stir just until moistened.
  • Spoon into 12 paper-lined muffin cups.
  • Bake 23 to 25 min. or until toothpick inserted in centres comes out clean. Cool in pans 10 min. Remove to wire racks; cool completely.
  • Meanwhile, toast remaining flaked coconut; cool completely.
  • Spread frosting onto muffins; sprinkle with toasted coconut.

Make Ahead

These deliciously moist muffins can be baked ahead of time. Cool completely, then store in tightly covered container at room temperature up to 2 days. Frost, then sprinkle with toasted coconut just before serving.
