Who would have thought of adding ketchup to cookie dough? We did! The ketchup adds a sweetness that is the perfect complement to the spiced cream cheese filling for the sandwich cookies. These soft cookie sandwiches make a great addition to a packed lunch. Or, enjoy one with a cold glass of milk as a quick snack.

  • Combine flour, baking powder, baking soda and spices. Beat brown sugar, granulated sugar and 1 cup butter in large bowl with mixer until light and fluffy. Blend in eggs, ketchup and 1 tsp. vanilla. Gradually add flour mixture, beating well after each addition. Stir in oats, carrots, raisins and nuts.
  • Refrigerate 2 hours.
  • Heat oven to 350ºF. Drop heaping tablespoonfuls of dough, 2 inches apart, into 36 mounds on baking sheets sprayed with cooking spray.
  • Bake 15 to 18 min. or until edges are lightly browned. Cool on baking sheet 2 min. Remove to wire racks; cool completely.
  • Beat cream cheese and remaining butter in large bowl with mixer until creamy. Gradually add icing sugar, mixing well after each addition. Blend in remaining vanilla. Spread about 2 tsp. cream cheese mixture onto bottom sides of half the cookies; cover with remaining cookies to make 18 sandwiches.
