  • Heat oven to 425ºF.
  • Place 10-inch ovenproof or cast iron skillet in oven.
  • Combine first 4 ingredients in large bowl. Stir in broccoli and cheese.
  • Reserve 2 Tbsp. oil. Whisk remaining oil with eggs and buttermilk until blended. Add to cornmeal mixture; stir just until moistened.
  • Remove hot skillet from oven. Add reserved oil; tilt skillet to evenly coat bottom with oil. Add prepared batter.
  • Bake 20 to 25 min. or until toothpick inserted in centre comes out clean. Cool slightly.

Special Extra

Stir 1/2 cup fresh corn kernels and 2 Tbsp. chopped red chiles into cornbread batter before pouring into prepared skillet and baking as directed.
