  • Cook potatoes in large pan of boiling water 20 min. or until tender.
  • Drain potatoes, reserving 1/2 cup cooking water. Return potatoes and reserved cooking water to pan. Add cream cheese product. Use back of large spoon to smash potatoes slightly while mixing them with the cream cheese just until blended.
  • Stir in bacon and parsley.

Note

While we love the bacon flavour in this potato side dish, the potatoes are equally delicious when prepared without the bacon pieces.
