  • Heat oven to 375ºF.
  • Mix first 7 ingredients in large bowl. Stir in cheese, bacon bits and onions.
  • Mix egg and buttermilk in small bowl; stir into dry ingredients just until moistened. Spoon batter evenly into 12 muffin cups that have been sprayed with cooking spray. Sprinkle Parmesan on top of each muffin.
  • Bake 20 to 22 min. or until toothpick inserted in centres comes out clean. Cool in pan 5 min; remove muffins to wire rack; cool completely. Store in airtight container up to 2 days.

Make Ahead

Muffins can be baked ahead of time. Cool, then wrap individually in plastic wrap and freeze up to 1 month. Thaw, then reheat in microwave just before serving.
