  • Heat oven to 425°F.
  • Cut thin slice off top of each tomato; scoop out seeds. Discard tops and seeds.
  • Place tomatoes in small baking dish sprayed with cooking spray. Add cheddar to tomato cups; slip 1 cracked egg into each cup.
  • Bake 18 min. or until egg whites are set and yolks are cooked to desired doneness, sprinkling with Parmesan after 10 min. Sprinkle with basil.

Serving Suggestion

Serve with whole grain toast and crisply cooked bacon slices.
