  • Heat oven to 425ºF.
  • Cut potatoes lengthwise in half; scoop out centres, leaving 1/4-inch-thick shells. Reserve removed centres for another use. (See tip.)
  • Place potato shells, cut sides up, on baking sheet sprayed with cooking spray; brush with dressing.
  • Bake 40 min. or golden brown.
  • Fill potato shells with cheese and bacon. Bake 4 to 5 min. or until cheese is melted.
  • Sprinkle with onions.

How to Use the Removed Baked Potato Centres

Cool, then refrigerate removed potato centres. When ready to serve, heat up and use to prepared mashed potatoes.
