A delicious big sister to the traditional onion blossom, our Cheesy Pull-Apart Potato Blossom is baked instead of fried so it's so much easier to make. Just be prepared to double or triple the recipe as needed since it's a surefire winner.

  • Heat oven to 425ºF.
  • Cut thin lengthwise slice off one side of potato; discard removed slice. Place potato, cut side up, on cutting board. Starting about 1/4 inch from potato peel, cut inside of potato into 3 concentric rings, being careful to not cut through to bottom of potato and spacing rings about 1/2 inch apart.
  • Place potato, cut side down, on cutting board. Make vertical short parallel cuts, about 1/2 inch apart, all the way around potato, being careful to leave centre of potato uncut. Turn potato over. Carefully pull potato pieces apart to slightly separate; brush with oil.
  • Transfer potato, cut side down, to microwaveable plate. Microwave on HIGH 5 min. Carefully transfer potato to baking dish sprayed with cooking spray.
  • Bake 10 min. or until potato is tender and heated through. Meanwhile, combine cheeses and parsley.
  • Sprinkle cheese mixture over potato; bake 5 min. or until melted. Top with bruschetta.

Substitute
