  • Heat half the dressing in large skillet on medium heat. Add chicken; cook 10 to 12 min. or until evenly browned on all sides, turning after 6 min. Remove chicken from skillet; cover to keep warm.
  • Add remaining dressing, mushrooms and onions to skillet; cook and stir 5 min. Add garlic, cook and stir 1 min. Add water; stir to scrape browned bits from bottom of skillet. Add tomatoes, olives and herbs; mix well. Bring just to simmer.
  • Return chicken to skillet; cover. Simmer on medium-low heat 30 min., turning chicken and stirring sauce after 15 min. Remove lid; cook chicken mixture additional 10 min. or until chicken is done (165ºF), and sauce is slightly thickened.

Make Ahead

This dish freezes well. Make a double batch, then cool and freeze half to enjoy as part of another meal.

Special Extra

Substitute 1 Tbsp. each chopped fresh basil and oregano for the dried herbs. Garnish with sprigs of additional basil or oregano just before serving. Or, garnish with chopped fresh parsley instead.
