  • Place chicken breasts in 2-L pot; add enough water to cover by 1-inch. Add 2 Tbsp. dressing. Bring to a simmer over medium-high heat. Reduce heat to medium-low; cook chicken 15 to 18 min. or until done (165ºF). Remove chicken; refrigerate 30 min.
  • Meanwhile, pit and peel mango half; cut into 12 1-inch cubes. Cut each chicken breast into 6 slices. Fold slice of chicken in half; layer with mint leaf and mango on wooden skewer. Repeat with remaining chicken, mango and mint. Serve with remaining dressing.


Replace mango cubes with pineapple chunks.

Poaching the chicken breasts in step one can be done ahead. Refrigerate up to 3 days.
