This is a super-easy, but wonderfully tasty salad recipe. All you need is a rotisserie chicken, rice noodles, shredded cabbage, shredded carrots and lime dressing! Yum!

  • Prepare noodles as directed on package.
  • Meanwhile, combine all remaining ingredients except dressing in large bowl.
  • Drain noodles. Add to chicken mixture along with the dressing; mix lightly.

Serve with lime wedges.

Substitute chopped fresh parsley for the cilantro.

    This is a new favorite of mine. I use shredded lettuce, carrots and cucumber instead of the coleslaw. I also usually end up BBQing boneless chicken thighs that have been marinated in the Zesty Lime dressing and top with peanuts instead of cilantro. I also keep all the components separate so the kids can ******** it on their plates (otherwise they wouldn't eat it!).

    I made this for my family for dinner, except I substituted the coleslaw/ cabbage for an iceberg salad mix with cucumber and carrots. It was served layered - salad, then the chicken noodle mixture then topped with chopped peanuts. It was very good. Even my picky eater was surprised he liked it.
