Assemble chicken bundles and place in baking dish as directed. Refrigerate up to 4 hours. When ready to serve, bake, uncovered, in 375ºF oven 35 min. or until chicken is done (170ºF).
Stir chopped fresh basil and/or sliced black olives into pasta sauce before heating.

Although good, I felt the spinach mixture lacked taste. I added a few shakes of different Epicure spices I had on hand to give it some 'oomph'. I did an onion one and a bruschetta one. This made the spinach mix more like a pesto-taste.
