  • Mix first 4 ingredients in medium bowl until blended. Pour half the soy sauce mixture into large bowl; set aside.
  • Add coconut milk to soy sauce mixture remaining in medium bowl; whisk until blended. Add peanut butter powder; mix well. Refrigerate until ready to serve.
  • Meanwhile, add oil and sugar to soy sauce mixture in large bowl; whisk until blended. Add chicken; toss until evenly coated. Let stand 15 min.
  • Heat greased barbecue to medium heat. Thread chicken onto 12 skewers. Grill 3 to 5 min. on each side or until done. Serve with the peanut sauce.

How to Prevent the Skewers from Burning

If using wooden skewers, soak them in water 30 min. before using to prevent them from burning on the barbecue or under the broiler.

Use Your Broiler

You can cook these chicken skewers using your broiler instead of the outdoor barbecue. Heat broiler. Broil skewers, 6 inches from heat, 3 to 5 min. on each side or until chicken is done.
