  • Heat oven to 400°F.
  • Toss tortilla strips with 1 Tbsp. dressing; spread into single layer on baking sheet. Bake 8 to 10 min. or until crisp and lightly browned.
  • Meanwhile, heat remaining dressing in large saucepan on medium-high heat. Add chicken; cook and stir 5 min. Add tomatoes and broth; stir. Bring to boil; simmer on medium-low heat 15 min., stirring occasionally. Stir in cilantro and lime juice.
  • Serve topped with cheese and tortilla strips.

Special Extra

Garnish individual servings with sour cream, and chopped avocados or guacamole.

    This is delicious! Reminds me of the soup I had in Mexico. I added a can of green chilies though and puréed the soup before adding the cheese and tortilla strips.

    Very, very good soup. I added a can of corn niblets; onions, yellow & green pepper. Think I would add some fresh mushrooms next time.
