  • Heat 1 Tbsp. oil in large nonstick skillet on medium heat. Add chicken; cook 8 to 10 min. or until done, stirring occasionally. Transfer chicken to plate; cover to keep warm.
  • Heat remaining oil in same skillet. Add peppers, onions and garlic; cook and stir 5 min. Add rice; cook and stir 2 min. Stir in pasta sauce and water. Bring to boil, stirring constantly to scrape browned bits from bottom of skillet.
  • Add corn, peas and chicken; mix well. Cover; simmer 35 to 40 min. or until rice is tender.

Substitute

Substitute 2 cups of your favourite frozen mixed vegetable blend for the frozen corn and peas.
