  • Heat 1 Tbsp. oil in large nonstick skillet on medium-high heat. Add chicken, cook and stir 4 min. or until evenly browned. Spoon onto plate; cover to keep warm.
  • Cook peanut butter, coconut milk, soy sauce, curry paste, ginger and remaining oil in saucepan on low heat 3 min. or until heated through, stirring frequently. Remove from heat.
  • Add water and vegetables to skillet; cook 3 to 4 min. or until vegetables are crisp-tender. Add nuts, chicken and peanut butter sauce; mix well.

Serving Suggestion

Serve over hot cooked rice.

Special Extra

For more colour and flavour, cook 1 chopped red pepper along with the carrots and snow peas.
