  • Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 min. or until crisp-tender.
  • Add tomatoes, broth and carrots; stir. Bring to boil; simmer on medium-low heat 15 min. or until carrots are tender, stirring occasionally.
  • Blend vegetable mixture, in small batches, in blender until smooth, adding dressing with the last batch of cooked vegetables.

Serving Suggestion

Serve over your favourite hot cooked pasta.


Create a vegetarian version of this delicious soup by substituting canned vegetable broth for the chicken broth.

    This is so good and so easy to make. I also add a couple of stalks of chopped celery, use fire roasted tomatoes instead of chili-style, and use veggie broth instead of chicken broth, and sometimes mayo or balsamic instead of Thousand Island, depending on the flavour I'm looking for that night and still excellent. We like it served with croutons and grated cheese on top.
