This is so good and so easy to make. I also add a couple of stalks of chopped celery, use fire roasted tomatoes instead of chili-style, and use veggie broth instead of chicken broth, and sometimes mayo or balsamic instead of Thousand Island, depending on the flavour I'm looking for that night and still excellent. We like it served with croutons and grated cheese on top.
