  • Heat oven to 400°F.
  • Combine bread crumbs and cheese in large shallow dish. Season meat with pepper.
  • Heat oil in large skillet on medium-high heat. Add meat; cook 2 to 3 min. on each side or until evenly browned on both sides. Remove from skillet.
  • Reserve 2 Tbsp. dressing for later use. Brush meat with remaining dressing; coat with crumb mixture. Place on parchment-covered baking sheet.
  • Bake 20 to 25 min. or until done (160°F). Let pork stand 10 min. before slicing. Meanwhile, combine Brussels sprouts, apples, nuts, cranberries and reserved dressing.
  • Serve meat with the Brussels sprouts salad.

Substitute

Substitute chopped toasted walnuts or hazelnuts for the pecans.
