  • Heat oven to 350ºF.
  • Beat egg and Miracle Whip in large bowl with whisk until blended; stir in zucchini. Mix remaining ingredients in separate bowl until blended. Add to zucchini mixture; stir just until moistened.
  • Pour into 8x4-inch loaf pan sprayed with cooking spray.
  • Bake 50 min. or until toothpick inserted in centre comes out clean. Cool bread in pan 10 min.; remove from pan to wire rack. Cool completely.


For best results, let the wrapped cooled bread stand overnight before slicing to serve.

    Made this last night and it was awesome! Light and moist, I used 1/2 cup of sugar instead of the 1 cup and I think I will try to cut back a little more when I make my next one!

    I just made this loaf last night and it turned out fantastic! I will be making this again for sure. I used 1 cup of whole wheat flour and 1/2 cup of white flour. Yum!!!

    been making this for almost 3 years now and my whole family loves it! great lunch box option. have made it in muffin format and even in a square pan and always great results. first time I made it we did not have any cinnamon left so I used nutmeg and it turned out equally well.
