Cheesecake can be made ahead of time. Cool completely, then wrap tightly and freeze up to 2 months. Thaw overnight in refrigerator before serving.
Prepare as directed, using Philadelphia Light Cream Cheese.
Place completely unwrapped packages of cream cheese in microwaveable bowl. Microwave on HIGH 30 to 45 seconds or until slightly softened.
Chop 2 additional oz. Baker's Semi-Sweet Chocolate. Place in microwaveable bowl. Stir in 2 Tbsp. whipping cream. Microwave on MEDIUM 1-1/2 minutes. Stir until chocolate is completely melted and smooth. Pour into small plastic bag. Trim small corner from bottom of bag; squeeze from top of bag to drizzle chocolate over chilled cheesecake. Refrigerate until set.
