Bitterness comes from the white pith under the citrus peel. When grating the peel, use either a hand grater or citrus zester to remove only the coloured outer part of the citrus peel.
For less tart flavour, use only half the amount of the grated peel.

I found there is too much citrus flavor in this recipe. I've only made it once but I would probably cut back on the slices under the chicken.
