Prepare as directed, substituting a 13x9-inch pan for the springform pan, decreasing the oven temperature to 325ºF and decreasing the baking time to 28 to 30 min. or until centre of cheesecake is almost set. Cool completely in pan.
Substitute 1 cup blueberries for 1 cup of the raspberries.
Wash the lemon thoroughly, then dry it. Use a grater with small holes, or a zester, to remove the lemon peel, being careful to remove just the outer layer and not the bitter white pith.
