Substitute 1 can (10 fl oz/284 mL) mandarin orange segments, drained, for the fresh orange sections.
When buying oranges, select ones that have smooth bright skins and are firm when squeezed.
The spinach is rich in vitamin A and makes an excellent source of vitamin C when combined with the oranges.

Excellent salad, I make this often for myself although family also likes it. I have passed this on to several others who find it as tasty as I do, makes a great lunch for taking to work.
I loved this salad, brought it as a potluck item to a party; everyone loved it. I also used a red grapefruit as suggested in one of the ratings. I minced the onions, and saved the juice from orange and grapefruit and added it to the dressing with some fresh cracked pepper. My new favorite salad!
