  • Preheat oven to 350°F. Place cereal, dates and margarine in medium bowl. Add boiling water; stir until margarine is melted and mixture is well blended. Cool. Add egg and pumpkin; mix well. Mix remaining ingredients in large bowl. Add cereal mixture; stir just until moistened. (Batter will be thick.)
  • Pour into greased 9x5-inch loaf pan.
  • Bake 55 min. or until wooden toothpick inserted in centre comes out clean. Cool in pan 10 min.; remove from pan to wire rack. Cool completely.

Storage Know-How

Wrap individual slices in plastic wrap; store in freezer until ready to thaw and serve.

To Double

To double recipe, prepare as directed using 1 can (28 oz/796 mL) pumpkin and doubling remaining ingredients.

Note

For easier slicing, wrap bread and store overnight before cutting into slices the next day.
