  • Heat oven to 350°F.
  • Combine flour, baking powder and salt. Beat 1/2 cup butter and granulated sugar in large bowl with mixer until light and fluffy. Add eggs, 1 at a time, mixing well after each addition. Blend in milk and coconut extract. Gradually add flour mixture, mixing well after each addition.
  • Pour into greased and floured 9x5-inch loaf pan.
  • Bake 50 to 55 min. or until toothpick inserted in centre comes out clean. Cool 15 min. Remove cake from pan to wire rack; cool completely.
  • Beat cream cheese, icing sugar and remaining butter in medium bowl with mixer until light and fluffy. Gently stir in Cool Whip until blended Spread onto cake; top with coconut chips.

Substitute

Substitute whole milk or 2% milk for the coconut milk.
