Canned coconut milk often separates into two layers when chilled - a watery coconut milk layer topped by a thicker coconut cream. If a recipe calls for the coconut cream from a can of coconut milk, buy a brand of canned coconut milk that doesn’t contain emulsifiers (which prevent separation) or look for a brand that only has two ingredients: coconut and water.
Refrigerate the reserved coconut milk in airtight container. Use to prepare your favourite smoothie recipe.
