  • Heat oven to 350°F.
  • Combine brown sugar, flaked coconut and spices. Add 1/4 cup of the brown sugar mixture to strawberries in medium bowl; mix lightly.
  • Beat cream cheese, butter and granulated sugar in large bowl with mixer until light and fluffy. Add eggs, 1 at a time, mixing well after each addition. Blend in coconut extract. Combine flour, baking powder and baking soda; gradually add to cream cheese mixture, mixing well after each addition.
  • Pour batter into 13x9-inch parchment-lined pan sprayed with cooking spray; top with strawberry mixture. Sprinkle with remaining brown sugar mixture.
  • Bake 35 to 40 min. or until toothpick inserted in center comes out clean. Cool completely.


Substitute blueberries for the chopped strawberries.
