Measure ingredients accurately. Prepared fruit should be measured in a glass measuring cup after chopping. Sugar should be measured in a dry measuring cup that can be leveled off with a knife.
Sugar helps jams and jellies set properly, so don't reduce the amount of sugar used in jam or jelly recipes.
