Use firm ripe fruit or unsweetened frozen fruit that has been thawed in the refrigerator. Using over-ripe fruit, or adding extra fruit, will affect the set. Measure any juices with the fruit.
To ensure accuracy of the sugar measure when preparing jams, use a dry measuring cup to measure the sugar, then place all the measured sugar in a separate bowl before adding it to the fruit mixture in saucepan.
