  • Peel peaches; chop finely. Measure exactly 4 cups prepared peaches into large saucepan. Add pectin crystals; mix well.
  • Bring to full rolling boil on high heat. Add sugar; mix well. Return to full rolling boil; cook 1 min. Remove from heat. Stir and sim foam for 5 min. to prevent fruit from floating to surface.
  • Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims. Cover with lids. Let stand at room temperature 24 hours or until set.

Keeping it Safe

Cooked jam may be stored at room temperature, unopened, for up to 1 year. Once opened, refrigerate jam and use within 3 weeks.

How to Accurately Measure the Sugar

To ensure accuracy of the sugar measure when preparing jams or jellies, use a dry measuring cup to measure the sugar, then place all the measured sugar in a separate bowl before adding it to the boiling fruit mixture in saucepan.
