Place the hen, breast side down, on cutting board. Cut along both sides of backbone with large sharp knife or strong kitchen shears. Discard or save bones for making broth. Flip hen over, then firmly press down on breast bone to flatten hen. Cut through breast bone to cut chicken lengthwise in half as directed in recipe.
Serve with a green salad tossed with your favourite Kraft Dressing.
Prepare using red new potatoes.
