  • Heat oven to 400ºF.
  • Remove and discard backbone from Cornish hen; cut hen lengthwise in half. Brush with sun-dried tomato dressing; place, skin sides up, on half of parchment-covered rimmed baking sheet.
  • Toss vegetables with Miracle Whip; spread onto other side of prepared baking sheet. Place rosemary sprigs between chicken and vegetable pieces.
  • Bake 45 to 50 min. or until chicken is done (165ºF) and vegetables are tender, turning vegetables every 15 min.

How to Cut the Cornish Hen in Half

Place the hen, breast side down, on cutting board. Cut along both sides of backbone with large sharp knife or strong kitchen shears. Discard or save bones for making broth. Flip hen over, then firmly press down on breast bone to flatten hen. Cut through breast bone to cut chicken lengthwise in half as directed in recipe.

Serving Suggestion

Serve with a green salad tossed with your favourite Kraft Dressing.
